Cheung Fun Old Fashioned – Holly Graham Original Cocktail
Partnering with Jameson for International Women’s Day 2023, Holly concocted the Cheung Fun Old Fashioned. Inspired by her east Asian surroundings; umami flavours of soy and sesame, gives a Cheung Fun the perfect balance of sweet and savoury.
“I’ve lived in Asia for well over a decade, having called Hong Kong home for the best part of that. I love Cantonese food, and love using soy in cocktails, so wanted to base an Old Fashioned on the flavour of Cheung Fun – a dish of rice rolls doused in different sauces – including soy – and topped with sesame seeds. The salty umami of soy and sesame plays really well with whiskey too.”

60 ml Sesame infused Jameson

20 ml Soy caramel (5:2 caramel and light soy sauce)

1 Dash Orange bitters

1 Dash Angostura (aromatic) bitters

Garnish with Sesame Seeds

Stir all ingredients over ice in a mixing glass.

Strain into a rocks glass over a large ice cube.
