What’s the difference between bourbon and Irish whiskey? Is bourbon a whiskey?

Firstly, yes, bourbon is a type of whiskey. Whiskey can be made anywhere—though sometimes it’s spelled without the “e”—and bourbon can only be made in the U.S. There are differences in the ingredients, flavors, and aging processes, too, and we’re here to tell you all about it.

A key difference between bourbon and other whiskey spirits lies in the blend, which impacts the flavor profile.

    • To be classified as bourbon, the mash must contain a minimum of 51% corn. Many distillers opt for 65-75% corn.
    • During the distillation process, nothing can be added except water. This means that all the flavor comes from carefully selected grains and the new, charred oak barrels.

Aging Process

Whiskey is almost always aged in oak, and for good reason—it’s strong yet porous, giving the spirit room to breathe and develop its distinct flavor. And, unlike other woods, oak won’t leak when it’s oversaturated.

By law, bourbon must be aged in brand-new charred oak barrels without any additives or coloring. To earn the title “straight bourbon whiskey,” the spirit must age in new, charred oak barrels for at least two years.

These oak barrels can only be used once for bourbon, but they can go on to bring bourbon’s distinct flavor to spirits like tequila or scotch.

Jameson Irish Whiskey is carefully crafted with a unique aging process that involves bourbon and sherry casks. These casks give Jameson notes of toasted wood, vanilla, and sweet sherry.

Where it’s Made

Bourbon must be made in the U.S.—any of the 50 states will do—while whiskey can be made anywhere. To earn the coveted “Irish” label, a whiskey must mature for at least three years in Ireland.

Though bourbon can be produced anywhere in the U.S., Kentucky reigns supreme as the bourbon capital, making a staggering 95% of the world’s bourbon supply.
